Oatmeal Cookies
What You Need:
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 8 tablespoons (1 quarter-pound stick) unsalted butter, softened
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 tablespoon milk
  • 1¼ cups uncooked oatmeal

  • How To Cook:
    1. Preheat the oven to 350°F and lightly butter two 11-by-17-inch baking sheets. Sift the flour, baking powder and salt together into a mixing bowl.

    2. Cream the butter, the brown sugar and the granulated sugar together by mashing them against the side of another mixing bowl with a wooden spoon.

    3. Stir in the egg, the vanilla extract and the milk, continuing to stir until the mixture is smooth. Beat in the flour mixture, a little at a time, then add the oatmeal, stirring until the mixture is well blended.

    4. Drop the batter by the tablespoonful onto the baking sheets, leaving space between for the cookies to expand. Bake for 12 minutes, or until the cookies are lightly browned on top.
