Butter Cookies
(Boterkoek)
What You Need:
  • ½ pound (2 sticks) unsalted butter, softened
  • ½ cup sugar
  • ½ teaspoon vanilla extract
  • 1½ cups flour
  • ¼ teaspoon salt

  • How To Cook:
    1. Preheat the oven to 350°F. In a deep bowl, cream the butter with the sugar and vanilla, beating and mashing them against the sides of the bowl with a spoon until the mixture is light and fluffy.

    2. Combine the flour and salt, and sift them into the bowl, ½ cup at a time, beating well after each addition.

    3. Scoop the dough onto the center of a large ungreased baking sheet. With a metal spatula or the flat of a table knife spread the dough into a 9-inch square cake about ½ inches thick.

    4. Bake in the middle of the oven for about 35 minutes, or until it is firm to the touch and the top is golden brown. Remove the pan from the oven immediately and use a sharp knife and ruler to cut the "boterkoek" into 1½ - inch squares.

    5. Carefully transfer the squares to wire cake racks to cool completely. "Boterkoek" will keep for 2 or 3 weeks in tightly covered jars or tins.

    To Make: about 3 dozen 1½ - inch squares
