What You Need: |

7 ounces dark rum
2 ounces strained fresh lime juice
4 tablespoons superfine sugar
A dash of Angostura bitters
1 cup crushed or finely cracked ice
Freshly grated nutmeg

How To Cook: |
|
|
1. Combine 6 ounces of the rum, the lime juice, superfine sugar, bitters and cracked ice in a mixing glass, and place a bar shaker on top of the glass.

2. Grasping the glass and the shaker firmly together with both hands, shake them vigorously 9 or 10 times.
|
3. Remove the shaker and pour the contents of the glass, unstrained, into 2 chilled 10-ounce highball glasses.
|
4. Place a teaspoon upside down in each glass in turn and very slowly pour ˝ ounce or more of the rum over the back of the spoon, letting it trickle off onto the surface of the drink so that the rum floats on top.

5. Grate a little nutmeg over the drink and serve at once.

6. "Planter's punch" is often served garnished with some kind of fresh fruit.
|
7. If you like, add a maraschino cherry and a pineapple or banana strip to each drink, or slit the lime or orange slices from peel to center and stand them on the rim of each glass.
