Ramos Gin Fizz
The gin fizz was invented in 1888 by Henry C. Ramos of the Imperial Cabaret in New Orleans. The formula for the original "Ramos Gin Fizz" has never been disclosed, but the following recipe is a favorite version of the drink today.

What You Need:
  • 2 egg whites
  • 4 teaspoons superfine sugar
  • ½ cup light cream
  • 2 ounces gin
  • 4 teaspoons strained fresh lemon juice
  • ½ teaspoon orange-flower water
  • ¼ teaspoon vanilla extract
  • 3 to 4 ice cubes
  • A 10-ounceTom Collins glass, chilled

  • How To Cook:
    1. Combine the egg whites and sugar in a mixing glass and stir with a bar spoon until the sugar dissolves.

    2. Add the cream, gin, lemon juice, orange flower water, vanilla extract and ice cubes.

    3. Place a bar shaker on top of the mixing glass and, grasping the glass and shaker firmly together with both hands, shake vigorously 9 or 10 times.

    4. Remove the shaker, place a strainer over the mixing glass and pour the gin fizz into the chilled Tom Collins glass.

    To Make: 1 tall drink
