Breadfruit Pudding
What You Need:
  • 1 pound breadfruit, peeled, cooked, and mashed
  • ½ cup sugar
  • ¼ cup butter, melted
  • 1 tablespoon cornstarch
  • 1 teaspoon grated lemon peel
  • 2 cups light cream
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark rum
  • How To Cook:
    1. To prepare fresh breadfruit, peel and slice the fruit in half, remove the core, cube, and cook as you would potatoes, boiling for 15 to 20 minutes.

    2. Combine all the ingredients in a bowl and beat until smooth.

    3. Pour the batter into a well-buttered baking dish and bake in a preheated oven for about 1½ hours, or until a tester comes out clean.

    4. Serve warm with a cream sauce, a rum sauce, or ice cream.
