Jamaican Pepper Pot
What You Need:
  • 2 pounds of chopped callaloo or spinach
  • 2 quarts water
  • ½ of a pig's tail
  • ¼ pound flour
  • 2 stalks scallion
  • 1 clove garlic
  • 1 scotch bonnet pepper
  • ¼ pound salt beef
  • ½ pound beef stew
  • Yellow Yam
  • 1 pound pre-cooked shrimp
  • 1 dozen okras sliced
  • 1 minced onion
  • 1 coco
  • Salt, pepper, herbs, hot pepper to taste

  • How To Cook:
    1. Cut salted beef and pig's tail into small pieces. Soak to get rid of excess salt.

    2. Cut beef stew into chunks.

    3. Boil both beef and pig's tail until cooked soft (you may cook them in a pressure cooker).

    4. Wash callaloo or spinach and add to water. Cook for approximately 10 minutes.

    5. Remove from stock and puree in a blender or food processor.

    6. Cut up okras, peel yam and cocoa and cut into small pieces.

    7. Add okras, yam, coco, green pepper and garlic to water.

    8. Make spinners.

    9. Add to stock along with pureed callaloo.

    10. Simmer for approximately 30 minutes or until soup is thickened.

    11. Add scallion, thyme and cook for approximately fifteen minutes.

    12. Add shrimp and cook for five minutes. Serve hot.
