Salt Cod Fritters
(Accras De Morue)
What You Need:
  • 1 pound salted codfish, preferably deboned
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 egg
  • 1 garlic clove, minced
  • 1 small fresh hot pepper, seeded and finely chopped

  • How To Cook:
    1. Soak the codfish in cold water for 2 hours (or bring the water to a rolling boil and boil for 5 minutes to remove excess salt quickly).

    2. Drain and then clean the codfish of any skin and bones. Flake or finely chop and set aside.

    3. Sift the flour and baking powder into a medium size bowl.

    4. Whisk together the milk and egg in another bowl, then combine with the flour mixture.

    5. Add all the seasoning ingredients and flaked codfish, and mix into a sticky batter. Taste and add salt and pepper, if necessary.

    6. Heat the oil in a deep fryer or a large, heavy frying pan, and then add the batter by the tablespoon.

    7. Fry each side until golden brown, turning occasionally and pressing flat with a spatula.

    8. Serve hot as an appetizer, snack, or side dish.
