Fava
What You Need:
  • 1 cup yellow split peas
  • ˝ cup minced onions
  • 1 teaspoon minced garlic
  • 1 fresh tomato, peeled, seeded and chopped, or ˝ cup crushed canned tomatoes
  • 1 teaspoon salt
  • 1 teaspoon dried or
  • 1 tablespoon fresh chopped mint (optional)
  • 1 tablespoon chopped parsley
  • 1 tablespoon olive oil
  • How To Cook:
    1. Wash peas, cover with water, and bring to a boil; skim. Add onions, garlic, tomato, salt, and mint.

    2. Simmer, covered, until water is absorbed (about 30 minutes). Stir occasionally.

    3. Before serving, sprinkle with parsley and olive oil. Serve hot or cold.

    NOTE:
    1. Fava has a very thick, smooth consistency. Olive oil is dribbled over each serving to suit the individual taste.

    To Serve: 4 to 6
