Quick Sweet Fritters
(Loukoumades Horis Mayia)
These sweet fritters are especially easy because they are made with self-rising cake flour instead of yeast.

What You Need:
  • Vegetable oil for frying, approximately 2 cups
  • 1 cup chopped walnuts
  • Ground cinnamon for topping

    SYRUP
  • ½ cup honey
  • 1 cup sugar
  • ½ cup water

    BATTER
  • 1 cup milk
  • 1¼ cups self-rising cake flour
  • How To Cook:
    PREPARE THE SYRUP:
    1. Combine all ingredients in a saucepan.

    2. Bring to a boil, and simmer for 15 minutes. Set aside.

    PREPARE THE BATTER:
    1. Combine milk and flour and beat until batter is thick and bubbly. Let rest for 15 minutes.

    2. In a heavy saucepan heat 2 inches of oil to 360°. Drop tablespoonfuls of batter into hot oil.

    3. Fry only a few at a time and turn as soon as the loukoumades are golden brown.

    4. When brown all over, drain on absorbent paper, place on serving platter, and sprinkle with syrup, cinnamon, and chopped nuts. Serve warm.

    VARIATION:
    1. Instead of syrup, warmed honey can be used. Place one 16-ounce jar of honey, uncovered, in hot water. Simmer until warm.

    2. Dribble over the puffs, and sprinkle with cinnamon and nuts.

    VARIATION:
    1. 1 cup yogurt or ½ cup milk and ½ cup yogurt can be used in place of 1 cup milk listed above.

    2. These fritters will have a mildly sour taste.

    To Make: 2½ dozen fritters
