Skaltsounia With Raisins
(Skaltsounia Me Stafides)
What You Need:
DOUGH
  • 3 cups all-purpose flour
  • 1 teaspoon double-acting baking powder
  • 1 cup tahini (sesame seed paste available in Greek specialty shops)
  • ˝ cup warm water
  • 2 tablespoons honey
  • Rose water for sprinkling
  • 1˝ cups confectioners' sugar

    FILLING
  • ˝ cup chopped walnuts
  • ˝ cup chopped unblanched almonds
  • ˝ cup seedless raisins
  • ˝ cup orange marmalade
  • 2 tablespoons honey
  • How To Cook:
    MAKE DOUGH:
    1. Preheat oven to 350°.

    2. Sift flour and baking powder together.

    3. Add tahini and blend with fingers. Add water and honey.

    4. Roll dough out to a thickness of 1/3 inch and cut into 5-inch rounds.

    PREPARE FILLING:
    1. Combine nuts, raisins, marmalade, and honey. Place 1 tablespoon of filling on each round of dough.

    2. Fold dough to form a half circle, brush with a little water to seal, and press edges together.

    3. Put on ungreased cookie sheets and bake 30 minutes, or until golden.

    4. Sprinkle with rose water while hot and dust with confectioners' sugar. Cool on sheets.

    NOTE:
    1. This dough makes a good Lenten (nistisimo) pie crust for any purpose.

    To Make: 24 to 26 cookies
