Beef & Vegetable Stew
(Carbonada Criolla)
What You Need:
  • 1½ pounds beef, cut in 1-inch cubes
  • 2 tablespoons olive oil
  • 1 can (10½ ounces) condensed beef broth
  • 1 ½ soup cans water
  • 1 cup chopped onion
  • 1 large clove garlic, minced
  • 1 can (10¾ ounces) condensed cream of potato soup
  • 2 small zucchini squash, cut in strips
  • 2 cups sliced sweet potatoes
  • 1½ cups chopped tomatoes
  • 1 can (16 ounces) peach halves, drained
  • ½ cup diced green pepper
  • How To Cook:
    1. Brown beef in oil in a large, heavy saucepan; pour off fat.

    2. Add broth, water, onion and garlic; cover and cook over low heat 1¾ hours.

    3. Add remaining ingredients; cook 15 minutes longer, or until done, stirring occasionally.

    To Serve: 6 to 8
