Flounder Florentine
What You Need:
  • 2 tablespoons instant minced onion
  • 2 tablespoons water
  • 1 package (10 ounces) frozen chopped spinach, thawed
  • ¾ teaspoon dill weed, divided
  • 1/16 teaspoon ground nutmeg
  • 1 pound flounder fillets
  • 1/3 cup dry white wine
  • 1 tablespoon lemon juice
  • ¼ teaspoon paprika

  • How To Cook:
    1. Combine minced onion and water; let stand 10 minutes to soften. Place thawed spinach in a strainer; press out as much liquid as possible.

    2. In a small bowl, combine spinach with ½ teaspoon dill weed, nutmeg and onion; spread on fish.

    3. Roll fish, jelly-roll fashion; fasten with toothpicks if necessary. Place fish in a shallow 6-cup baking pan.

    4. Combine wine and lemon juice; pour over fish. Sprinkle with paprika and remaining dill weed.

    5. Bake, uncovered, in a preheated 350°F oven until fish turns opaque, about 25 minutes, spooning the wine mixture over fish occasionally.
