Mediterranean Fish Chowder

What You Need: |
|
|
1 quart water
¼ cup instant minced onion
¾ teaspoon fennel seed, crushed
½ teaspoon instant minced garlic
½ teaspoon salt
¼ teaspoon ground turmeric
1/16 teaspoon ground black pepper
1 bay leaf
1 cup peeled potatoes, cut in ½-inch cubes
½ cup thinly sliced fresh carrots
½ cup sliced fresh zucchini
1 pound fish fillets (flounder, cod, etc.) cut in 1-inch cubes
½ cup dry white wine
Italian or sourdough bread (optional)

How To Cook: |
|
|
1. Bring water to a boil in a medium-size saucepan.
|
2. Add minced onion, fennel seed, minced garlic, salt, turmeric, black pepper, bay leaf and potatoes.
|
3. Reduce heat and simmer, covered, 15 minutes.
|
4. Add carrots; simmer 3 minutes. Add zucchini; simmer, covered, until vegetables are tender, about 5 minutes.
|
5. Remove 1 cup vegetables and broth to the container of an electric blender; blend until pureed.
|
6. Return to saucepan; add fish and wine: Simmer, covered, just until fish turns opaque, about 1 minute.
|
7. Remove bay leaf before serving. Serve with huge hunks of Italian or sourdough bread.
