What You Need: |

¾ cup bulgur (cracked wheat)
1/3 cup chopped onion
1 large clove garlic, minced
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cardamom seed
1/8 teaspoon ground cloves
¼ cup butter or margarine
1 can (10½ ounces) condensed consomme
1 tablespoon lemon juice
½ cup finely chopped carrots
1/3 cup golden raisins
½ cup chopped fresh mint leaves or 1 tablespoon dried mint leaves, crushed
½ cup chopped tomato

How To Cook: |
|
|
1. Brown bulgur, onion, garlic and seasonings in butter in a saucepan until tender.
|
2. Add consomme, lemon juice, carrots, raisins and mint; bring to a boil.
|
3. Reduce heat, cover and simmer 20 minutes, or until done, stirring occasionally.
|
4. Stir in tomatoes; heat to serve.
