Minted Bulgur Pilaf
What You Need:
  • ¾ cup bulgur (cracked wheat)
  • 1/3 cup chopped onion
  • 1 large clove garlic, minced
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cardamom seed
  • 1/8 teaspoon ground cloves
  • ¼ cup butter or margarine
  • 1 can (10½ ounces) condensed consomme
  • 1 tablespoon lemon juice
  • ½ cup finely chopped carrots
  • 1/3 cup golden raisins
  • ½ cup chopped fresh mint leaves or 1 tablespoon dried mint leaves, crushed
  • ½ cup chopped tomato
  • How To Cook:
    1. Brown bulgur, onion, garlic and seasonings in butter in a saucepan until tender.

    2. Add consomme, lemon juice, carrots, raisins and mint; bring to a boil.

    3. Reduce heat, cover and simmer 20 minutes, or until done, stirring occasionally.

    4. Stir in tomatoes; heat to serve.

    To Serve: 4 to 6
