Mixed Vegetables, Spanish Style
This dish is similar to a vegetable combination meal the French Basques called piperade. This is often served with egg dishes and you can vary the vegetables to your family's taste.

What You Need:
  • ½ cup minced ham
  • ½ cup minced onion
  • 2 medium cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 can (10¾ ounces) condensed tomato bisque soup
  • 1/3 cup water
  • 2 tablespoons vinegar
  • 8 cups cubed eggplant (about 1½ pounds)
  • 1 package (9 ounces) frozen Italian green beans
  • 1 medium green pepper cut in strips
  • Hot cooked rice
  • How To Cook:
    1. Brown ham and cook onion with garlic in oil until tender in a large heavy pan.

    2. Blend in soup, water and vinegar.

    3. Add eggplant and green beans; cover and cook over low heat 10 minutes.

    4. Add green pepper; cook 5 minutes more, or until done, stirring occasionally.

    5. Serve with rice.
