Spinach Soup
What You Need:
  • 2 packages frozen chopped spinach
  • 6 cups beef bouillon (approximately)
  • 3 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper to taste
  • 2 hard-boiled eggs, peeled and sliced

  • How To Cook:
    1. Put the spinach in a covered casserole and cook in the microwave oven until tender (about 10 to 12 minutes), stirring several times. Drain and reserve all the liquid from the spinach.

    2. Use the liquid as part of the 6 cups bouillon. Keep the spinach as warm as possible.

    3. Melt the butter and mix in the flour. Stir in the bouillon gradually. Bring the bouillon to a boil, covered, stirring once or twice.

    4. Add the spinach, salt, and pepper. Blend thoroughly. Bring to a simmer. Serve with the egg slices floating on top.

    To Serve: 8
