Zucchini Brasilian Style
(Zucchini Brasiliera)
What You Need:
  • 2 slices bacon, diced
  • 3 table spoons minced onion
  • 1/3 cup finely-chopped green pepper
  • ½ teaspoon Kitchen Bouquet (or other meat glaze)
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 2 large zucchini

  • How To Cook:
    1. In a rectangular dish long enough to hold the zucchini, cook the bacon until it is crisp (about 2 minutes).

    2. Add the onion, green pepper, Kitchen Bouquet, sugar, salt and pepper. Cook, covered with waxed paper or plastic wrap, for 6 minutes.

    3. Cut off and discard the ends of the zucchini. Cut the zucchini in half, lengthwise. Place in the dish with the sauce and spoon the sauce over them.

    4. Cook, covered, in the microwave oven about 5 to 7 minutes or until the desired degree of doneness is obtained. Serve them with the sauce spooned on top.

    TIP:
        Do not cook the zucchini quite as tender as you desire it, as residual cooking will finish the cooking during the time it takes to get everyone seated at the table and served. Zucchini cooks so quickly that care must be taken not to over-cook it
