Baked Onions
(Cipolle Al Forno)
What You Need:
  • 6 medium-size onions
  • ¾ cup olive oil
  • ¼ cup lemon juice
  • ½ teaspoon powdered dry mustard
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 green pepper
  • Paprika

  • How To Cook:
    1. Cut off and discard a top and bottom slice from the onions. Peel the onions and score them, cutting down 1/3 of the way from the top in two cuts at right angles to each other.

    2. Place in a covered casserole and cook in the microwave oven until tender (about 8 to 10 minutes). Blend the oil, lemon juice and seasonings.

    3. Pour over the onions and chill well. Occasionally, baste the onions with the lemon juice-oil mixture, for a better blending of flavors.

    4. Bring 1 cup water to boil in a 2-cup measure in the microwave. Cut and seed the green pepper and cut into long strips. Drop into the water and cook for one minute. Use as garnish with the onions. Top with paprika.

    TIP:
        The green pepper can be cut into quarters and seeded before dropping into the water and cooking for 1 minute. Then peel before cutting into strips. It is a nice, but not essential, touch. Some people will like the pepper cooked a little longer, but it should still have a crisp texture to contrast with the onion.
