Mashed Plantains
(Monfongo Con Caldo)
What You Need:
  • 4 firm, ripe plantains
  • Oil for deep-frying
  • ˝ pound pork cracklings (optional)
  • 1 clove garlic, peeled and crushed
  • ˝ cup Chicken Stock or use canned
  • Salt to taste

  • How To Cook:
    1. Cut the plantains as for Tostones and deep-fry them.

    2. Grind the tostones in a mortar, adding the cracklings a few at a time, and mix well.

    3. Add the garlic and mix well. Serve hot in the mortar along with the heated broth, or place in a small bowl and serve.

    4. Check for salt.

    5. The dish is eaten directly from the mortar or bowl.
