Paw Paw (Papaya) Soup
What You Need:
  • 2 tablespoons butter
  • 1 sliced onion
  • 1 paw paw peeled, seeded and sliced use a fruit which is past the green stage but not yet ripe
  • 3 cups water
  • A sprig of parsley
  • Salt, pepper and a dash of nutmeg
  • 3 cups milk
  • 1 tablespoon cornstarch

  • How To Cook:
    1. Melt butter and fry onions. Add the paw paw, water, parsley, salt and pepper.

    2. Cover and boil over a low heat for about one hour, or until paw paw is tender enough to force through a sieve.

    3. Return to saucepan and odd nutmeg. Mix cornstarch into milk until smooth, and, to the paw paw mixture. Stir, constantly.

    4. Cook for 10 minutes more over low heat, but do not allow boiling.
