Stuffed Pawpaw (Papaya)
What You Need:
  • 1 green pawpaw (just streaked with yellow)
  • 2 onions
  • 2 cloves garlic
  • 2 tomatoes
  • 2 slices of ham or bacon
  • 1 sweet pepper
  • 1 hot pepper
  • 1 tablespoon breadcrumbs
  • 1 egg
  • Salt

  • How To Cook:
    1. Wash pawpaw. Cut off end and scoop out seeds. Chop onions, garlic, pepper and tomatoes and stew for 20 minutes.

    2. Grill bacon and dice. Mix with breadcrumbs, egg and salt. Add to the vegetable stew on pack into pawpaw.

    3. Cover with foil and set in a pan with a cup of water to bake in a moderate oven for an hour. Skin should not be eaten.
