What You Need:
  • 1 pig's head (made also with Rabbit using the whole animal)
  • Water, pimento leaves
  • Few cloves
  • Lime and salt to taste

  • How To Cook:
    1. Scrape and clean the head and wash with lime juice.

    2. Cover with water, pimento leaves, salt and cloves. Boil until tender.

    3. Cut Into chunks discarding the bones.

    4. Add lime juice to the liquid and pour over the brawn in a casserole.

    5. Place in the retreater to congeal.
