Coconut Duff
What You Need:
  • 3 tablespoons butter or margarine
  • ˝ cup sugar
  • 4 eggs, beaten until light
  • 1 dry coconut, grated
  • 2˝ cups flour
  • 5 rounded teaspoons baking powder

  • How To Cook:
    1. Cream butter or margarine with sugar; add eggs and beat until smooth.

    2. Blend in coconut.

    3. Sift together flour and baking powder; add to mixture.

    4. Add just enough water to make stiff dough.

    5. Place in top of double boiler which has been well greased or in a can with a tightly fitting cover; place in bottom of double boiler or in a tea kettle or pan of boiling water with water 2/3 from top of can.

    6. Steam 2 hours. Serve with any good pudding sauce.
