Codfish Fritters
What You Need:
  • ¼ pound salted codfish
  • Lime juice
  • ¼ pound flour
  • 1 minced onion
  • 1 diced tomato
  • ¼ teaspoon hot pepper sauce or ¼ scotch bonnet pepper
  • 1 teaspoon baking powder
  • 1 clove garlic
  • 2 tablespoon oil
  • 1 stalk scallion

  • How To Cook:
    1. Wash codfish with lime juice, dry, and mince with onions and tomatoes.

    2. Add the flour and hot sauce with a little water to make a batter.

    3. Heat oil in a skillet. Drop the mixture by spoonfuls into the skillet and press down so that fritters are quite thin.

    4. Fry on both sides until golden brown and crisp. Drain on paper towel and serve warm.
