Crab Louis
This famous American West Coast salad is made traditionally with Dungeness crab. Sometimes the dressing is prepared with a combination of mayonnaise and heavy cream rather than mayonnaise alone. Serve as a first course for a company dinner.

What You Need:
  • 1 small head lettuce, washed, dried, and shredded
  • 1 pound crabmeat
  • 3 hard-cooked eggs, shelled and sliced
  • 3 medium-sized tomatoes, peeled and sliced
  • 1 cup mayonnaise
  • 3 tablespoons chili sauce
  • 2 tablespoons chopped sweet pickle
  • 1 tablespoon fresh lemon juice
  • Salt, pepper to taste
  • 2 tablespoons minced chives
  • How To Cook:
    1. Place shredded lettuce in a salad bowl.

    2. Remove any shell or cartilage from crabmeat and place over lettuce.

    3. Arrange egg and tomato slices around crabmeat.

    4. Combine remaining ingredients, except chives, and spoon over crabmeat.

    5. Sprinkle with chives.

    To Serve: 4
