Near Eastern Cucumber - Yogurt Salad
What You Need:
2
cups
diced and seeded, peeled cucumbers
Salt
2 cups plain yogurt
2 garlic cloves, crushed
2
tablespoons
olive oil
2 tablespoons wine vinegar
3 tablespoons chopped fresh mint or dill
White pepper to taste

How To Cook:

. Put diced cucumber in a
colander
and sprinkle with salt.

. Allow to drain 30 minutes. Drain off all liquid and spoon cucumbers into a
bowl
.

. Add remaining ingredients and mix well.

. Refrigerate at least 1 hour before serving.
