Sardine Salad
Many varieties of small salt water fish are called sardines. Although they're usually eaten as snacks, they can be used to make interesting salads.

What You Need:
  • Crisp lettuce leaves, washed and dried
  • 2 cans (3¾ or 4 ounces each) sardines in oil, drained
  • 1 medium-sized red onion, peeled, sliced, and separated into rings
  • 1 medium-sized green pepper, cleaned and cut into strips
  • 3 tablespoons salad oil
  • 1 tablespoon cider vinegar or lemon juice
  • 1 or 2 garlic cloves, crushed
  • 2 teaspoons prepared mustard
  • 1 teaspoon prepared horseradish
  • Salt, pepper to taste
  • How To Cook:
    1. Arrange lettuce leaves on a serving dish.

    2. Place sardines, onion rings, and pepper strips over them.

    3. Combine remaining ingredients; shake well; pour over salad.

    4. Serve at once.
