Midwestern Hot Green Bean Salad
This favorite old-fashioned American salad is good with hamburgers, frankfurters, meat loaf, or grilled chicken.

What You Need:
  • ¾ pound fresh green beans, washed, stemmed, and cut into 1-inch pieces
  • Salt
  • 4 thin slices bacon, chopped
  • 1 medium-sized onion, peeled and chopped
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • Pepper to taste

  • How To Cook:
    1. Cook beans in a little salted boiling water in a medium saucepan until just tender, about 15 minutes, and drain.

    2. Fry bacon in a medium skillet until crisp and the fat is rendered.

    3. Remove bacon and drain on absorbent paper.

    4. Add onion to bacon fat and saute until tender.

    5. Mix in vinegar and sugar.

    6. Season with salt and pepper.

    7. Add beans and saute over low heat until beans are hot.

    8. Serve warm topped with bacon.

    To Serve: 4
