Mixed Pepper Salad
(Shopska Salata)
This traditional Bulgarian salad is called 'shopska salata', a name that is derived from the village of Shopka on the outskirts of Sofia. Serve with grilled or skewered lamb or pork.

What You Need:
  • 4 medium-sized green or red peppers, cleaned and cut into strips
  • 1 medium-sized cucumber, peeled and thinly sliced
  • 4 large tomatoes, peeled and thinly sliced
  • 2 medium-sized onions, peeled and thinly sliced
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice or vinegar
  • 3 tablespoons mixed fresh herbs (dill, parsley, or basil)
  • Salt, pepper to taste
  • ˝ cup diced white Feta or farmer cheese

  • How To Cook:
    1. Place peppers, cucumber, tomatoes, and onions in circles, overlapping each other, on a large plate.

    2. Combine remaining ingredients, except cheese, and pour over vegetables.

    3. Sprinkle with cheese.

    4. Serve at once.

    To Serve: 4 - 6
