Tomato - Yogurt Salad
(Raita)
A refreshing combination of yogurt and vegetables with seasonings is called 'rayta' or 'raita' in India. It is traditionally served with curries but also goes well with roast meats and grilled poultry. Other vegetables, raw or cooked, may be substituted for the tomatoes, if desired.

What You Need:
  • 2 cups plain yogurt
  • ½ cup minced onions
  • 1 cup diced peeled tomatoes
  • ¼ cup minced green peppers
  • 1 teaspoon ground cumin
  • Salt, pepper to taste
  • ¼ cup chopped fresh coriander or parsley

  • How To Cook:
    1. Combine ingredients in a bowl and refrigerate 1 hour or longer to blend flavors.

    2. Serve in the bowl or in individual small dishes.

    To Serve: 4 - 6
