Turkey - Avocado Salad
This colorful south-of-the-border combination salad is a good entree for an outdoor evening meal.

What You Need:
  • 1 medium-sized head leafy lettuce, washed, dried, torn into bite-size pieces, and chilled
  • ½ cup sliced scallions, with some tops
  • ½ pound cold, cooked turkey, cut into thin strips
  • ¼ pound Jack or Cheddar cheese, cut into thin strips
  • 1 medium-sized ripe avocado, peeled and cubed
  • 1 medium-sized carrot, scraped and thinly sliced
  • 1/3 cup salad oil
  • 2 tablespoons fresh lime or lemon juice
  • ½ teaspoon dried oregano
  • Dash cayenne
  • Salt, pepper to taste
  • 2 medium-sized tomatoes, peeled and sliced

  • How To Cook:
    1. Combine lettuce and scallions in a salad bowl.

    2. Arrange turkey, cheese, avocado, and carrots over them.

    3. Combine remaining ingredients, except tomatoes, and pour over salad.

    4. Serve at once, garnished with tomatoes.

    To Serve: 6
