1. Peel and slice aubergines, sprinkle with salt and drain in a colander.

2. Fry until golden brown.
|
3. Beat the eggs with salt and pepper and mix with the cheese.
|
4. Chop the aubergines and mix them with the egg and cheese, pour into a shallow dish and bake in a moderately hot oven (425°F) until a skin forms on top.
|
5. Serve cut into squares and dotted with butter.
