Carrot Tzimmes
What You Need:
  • 5 large carrots
  • 5 medium potatoes
  • 3 medium sweet potatoes
  • 2˝ - 3 pound beef brisket
  • 1 teaspoon salt
  • ˝ cup sugar or honey
  • Water
  • 1 small onion (optional)
  • 2 tablespoons flour
  • 2 tablespoons chicken fat or vegetable shortening

  • How To Cook:
    1. Cut carrots into thin rounds. Peel and cut potatoes into quarters. Peel and cut the sweet potatoes into 1-inch thick rounds.

    2. Brown the meat in a casserole. Add the vegetables, salt and honey or sugar.

    3. Add water to cover, bring to the boil and simmer for about 3 hours, adding more boiling water as often as required during cooking until the meat is tender.

    4. Do not stir; to prevent sticking, shake the casserole occasionally.

    5. If an onion is used, it should be left whole and removed before it becomes too mushy.

    6. When the liquid has been reduced by half, thicken by lightly browning flour in hot melted fat and stirring in some of the liquid from the tzimmes.

    7. Shake the casserole to distribute the thickening. Then bake in the oven for 30 minutes or till brown on top.
