What You Need:
FOR THE DOUGH
  • 8 oz brown rice
  • 1 pint boiling water
  • Salt
  • 1 egg

    FOR THE FILLING
  • 1 pound minced meat (preferably lamb)
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped onion
  • Fat for frying

  • How To Cook:
    1. Cook the rice in the boiling salted water, stirring occasionally until pasty and smooth.

    2. Stand it on one side until cool and then beat in the egg.

    3. Meanwhile brown the meat and onion in the olive oil.

    4. When the rice mixture is cool, divide it into eight and make each portion into a flat round cake.

    5. Divide the meat up between the rice cakes and roll up like a sausage roll, but make the rolls long and thin and pointed at each end.

    6. Fry the rolls until well browned on both sides and drain on crumpled paper.

    To Serve: 4 - 6
