Meat Balls In Spinach
(Taraba)
What You Need:
  • 1 pound spinach
  • 1 pound uncooked mutton
  • 1 onion
  • 1 shallot
  • Salt and paprika
  • Butter
  • Tomato sauce
  • Lemon juice

  • How To Cook:
    1. Wash the spinach and blanch it in boiling water for 1-2 minutes, then drain it.

    2. Make forcemeat with the finely chopped mutton, onion and shallot, and season lightly with salt and paprika.

    3. Shape the mixture into tiny balls, and wrap each in two spinach leaves.

    4. Put the balls into a pan with some melted butter, tomato sauce and lemon juice, packing them closely, and keep in position by putting a plate on top.

    5. Simmer very gently for 1˝ - 2 hours.

    To Serve: 4 - 6
