Mint And Parsley Salad
(Tabbouleh)
What You Need:
  • 1 cup bulgur (fine crushed boiled wheat)
  • ˝ cup mint leaves
  • 1˝ cups parsley
  • 1 green onion
  • ˝ - 1 cup olive oil
  • 2 tablespoons salt
  • ˝ cup lemon juice
  • 1 small tomato

  • How To Cook:
    1. Soak bulgur until soft. It will require 2 hours in cold water or 1 hour in warm water.

    2. Wash parsley and mint leaves thoroughly and chop very fine.

    3. Cut the onion into small pieces and wash all carefully. Drain bulgur and add.

    4. Pour over the oil, salt and lemon juice and mix all together.

    5. Chopped tomatoes may be added.

    6. This should be eaten using vine leaves, lettuce or cabbage leaves as scoops.

    To Serve: 4 - 6
