This is a ceremonial pudding, served to celebrate the birth of a boy.

What You Need: |

4 tablespoons ground cinnamon
4 tablespoons pounded aniseed
2 tablespoons pounded caraway seed
1 tablespoon pounded ginger
6 pints water
2 cupfuls washed, pounded and sifted rice
Sugar to taste
Nuts to decorate

How To Cook: |
|
|
1. Sift spices together and mix gradually with a little cold water until a smooth paste is formed.
|
2. Add 5 pints of water and boil for 30 minutes.
|
3. Then mix the rice (pounded arid sifted not too fine) to a smooth consistency with the remaining water.
|
4. Pour the boiling spiced water gently over the rice, add sugar and keep stirring over a low heat until it thickens.
|
5. Pour into bowls and when cool strew blanched almonds, walnuts and pistachios on top.
