Spice Pudding
(Mughley)
This is a ceremonial pudding, served to celebrate the birth of a boy.

What You Need:
  • 4 tablespoons ground cinnamon
  • 4 tablespoons pounded aniseed
  • 2 tablespoons pounded caraway seed
  • 1 tablespoon pounded ginger
  • 6 pints water
  • 2 cupfuls washed, pounded and sifted rice
  • Sugar to taste
  • Nuts to decorate

  • How To Cook:
    1. Sift spices together and mix gradually with a little cold water until a smooth paste is formed.

    2. Add 5 pints of water and boil for 30 minutes.

    3. Then mix the rice (pounded arid sifted not too fine) to a smooth consistency with the remaining water.

    4. Pour the boiling spiced water gently over the rice, add sugar and keep stirring over a low heat until it thickens.

    5. Pour into bowls and when cool strew blanched almonds, walnuts and pistachios on top.

    To Make: about 25 portions
