1. Rub the butter into the flour. Add the sugar, cinnamon and salt. Mix into a paste with the beaten egg.

2. Turn the paste on to a board, roll it out and cut into two equal-sized pieces. Place one piece on a cake tray.

3. Beat the butter, almonds and yolks together, mix in the chopped peel and vanilla.
|
4. Spread this mixture on the piece of paste on the cake tray, cover with the other half of the paste, and brush over with yolk of egg.

5. Place on the cake tray, bake in the oven at 350°F for 30 minutes, leave to cool and cut into slices.
