How To Cook: |

1. A copper coffee pot with a long handle and without a lid is the correct utensil to use, when available.
|
2. For each cup of coffee use ¾ oz. very finely ground coffee, ¾ oz. sugar and a little more than ¼ pint water.

3. Put all the ingredients in the coffee pot and stir till the mixture comes to the boll and becomes frothy.
|
4. Remove from the heat, and when the froth has subsided, replace the pot on a brisk heat.
|
5. Repeat the operation 3 times in all.
|
6. Just before serving, add a little cold water to settle the dregs, together with a few drops of rosewater to perfume the coffee, if desired.

Milk is never added.
