Chicken Groundnut Stew
What You Need:
  • 2½ - 3 pound chicken
  • ½ pint (approx.) hot chicken stock or water
  • 1 large onion
  • 1 tablespoon margarine or cooking oil
  • 3 - 4 tomatoes
  • 1 chili
  • 6 heaped teaspoons peanut butter or 2 pound roast and ground nuts
  • ¼ teaspoon ground cumin or curry powder

  • How To Cook:
    1. Cut the chicken into pieces.

    2. Fry chopped onion slowly in the fat until pale golden-brown.

    3. Remove the pan from the heat; add the peanut butter or groundnuts and enough liquid to give the consistency of thin cream.

    4. Add the tomatoes, chili, pepper, curry powder and sections of chicken, put the lid on the pan and simmer for 1 €“ 1½ hours; season to taste.

    5. Serve with plain boiled Patna rice and with side dishes; these can be rings of green pepper, mango chutney, sliced banana and hard-boiled eggs.

    6. Spinach or marrow is good vegetables to serve with it.

    7. Roast or boiled chicken can be heated through in this type of curry sauce
