Coffee Groundnut Cake
What You Need:
  • ˝ pound groundnuts (shelled, but with the brown inner skin still on)
  • ˝ pound caster sugar
  • 8 eggs
  • 2 dozen coffee beans

  • How To Cook:
    1. Mince groundnuts twice, to grind them really fine.

    2. Beat together caster sugar and egg yolks until the mixture is almost white.

    3. Whisk the egg whites very stiffly.

    4. Add the nuts and about coffee beans, ground to a powder, to the egg yolk mixture.

    5. Fold in the egg whites, put into a greased sandwich tin and bake in a moderate oven (350°F) until firm.

    6. When cool, cut in half and fill with coffee butter cream.
