Tasmanian Date Brownies
What You Need:
  • 2 cups sugar
  • 4 cups flour
  • 2 cups water
  • 2 teaspoons mixed spice
  • 2 tablespoons dripping
  • 1 teaspoon bicarbonate of soda
  • 1 pound dates (stoned)
  • A pinch of salt

  • How To Cook:
    1. Cook the sugar, water, dripping and dates gently together for about 5 minutes, then leave to cool.

    2. Sieve together the dry ingredients and beat into the date mixture.

    3. Spread the mixture in a flat greased baking tin and bake in a slow oven (325°F) until brown and set. Leave in the tin until cool, and do not cut until the next day.

    4. Serve sliced and buttered.
