Lake Trout With Dressing
What You Need:
  • 2 pound lake trout fillets
  • 1 teaspoon mixed poultry seasoning
  • 2 teaspoons salt
  • ˝ medium onion, minced
  • 4 breakfast cups dry breadcrumbs
  • 4 tablespoons butter

  • How To Cook:
    1. Wipe the fillets with a damp cloth.

    2. Sprinkle with 1 teaspoon of salt and place them in a buttered baking dish.

    3. Mix the breadcrumbs, seasoning and remaining salt.

    4. Heat the butter, lightly fry the onion and stir into the breadcrumbs.

    5. Arrange the stuffing over the fish and cover.

    6. Bake in a moderately hot oven (400°F), allowing 10 minutes per pound of fish.

    7. Remove the cover after 10 minutes baking, to allow stuffing to brown.

    8. NOTE: Poultry seasoning is the same as used in forcemeat stuffing, sage, thyme, etc.

    To Serve: 2 - 4
