Lancashire Fig Pie
Figs used to be eaten on Palm Sunday, in commemoration of the barren fig tree, the account of which occurs in the Gospel for this season.

What You Need:
  • 6 oz short crust pastry
  • ˝ teaspoon mixed spice
  • ˝ pound figs
  • 1 oz currants
  • A little corn flour
  • ˝ tablespoon treacle

  • How To Cook:
    1. Line a shallow pie plate with the pastry.

    2. Place the washed figs in a saucepan with just enough water to cover and stew them until tender.

    3. Strain the liquid and thicken with corn flour.

    4. Add the figs, spice, currants and treacle, mix well and put into the dish.

    5. Bake in a moderate oven (350°F) for about 45 minutes.
