Sugar Cakes

Originally this recipe included as much grated rock ammonia as will go on a three-penny piece (that would be the old silver piece), but the recipe works quite well without it.

What You Need:
  • 4 oz butter
  • 8 oz plain flour
  • 8 oz caster sugar
  • 1 egg

  • How To Cook:
    1. Cream the butter and sugar, and then work in the flour and well-beaten egg to make a smooth paste.

    2. Roll out very thinly, cut into rounds and mark with a scallop shell.

    3. Bake in a moderate oven (350°F) to a pale golden color.

    4. When cold, dust with caster sugar.
