Cookie Rings

What You Need:
  • 4 eggs
  • 8 oz plain flour
  • 3˝ oz caster sugar
  • Egg white and granulated sugar to finish
  • 8 oz softened butter

  • How To Cook:
    1. Hard-boil 2 eggs, cool and sieve the yolks.

    2. Add to the 2 whole eggs, with the sugar, and whisk together until beginning to thicken.

    3. Beat in alternately small portions of butter (not melted) and flour until the whole is a smooth paste.

    4. Put in a cool place until mixture is firm enough to handle 1 - 2 hours.

    5. Roll out portions lightly on a floured board into long, thin "snakes" the thickness of your little finger.

    6. Cut in lengths of 2-3 inches, join into rings, and brush with egg white and dredge with granulated sugar.

    7. Bake on a greased tray in a moderate oven (350°F) for 10-15 minutes.

    8. The cakes should remain yellowish in color.

    9. Place on a wire rack to cool and crisp. Store in an airtight tin.

    NOTE:
        A little grated orange rind gives added flavor. These are soft biscuits, perfect with coffee.
