Herring Pie
What You Need:
  • 3 medium-sized or 2 large herrings
  • 4 or 5 medium-sized potatoes
  • 2 large onions
  • 2 oz butter
  • Fat for frying
  • Seasoning
  • 4 tomatoes
  • ¼ pint milk

  • How To Cook:
    1. Several hours before the dish is to be cooked, scale and bone the herrings and put to soak in salted water.

    2. Slice the onions and fry them lightly till golden-brown.

    3. Skin and slice the tomatoes.

    4. Peel the potatoes and cut into thin lengthwise slices.

    5. Put dabs of butter over the inside of a fireproof dish, then put in a layer of sliced potato, followed by layers of onion and tomato; season, then add fish and a top layer of potato.

    6. Bake in a moderately hot oven (400°F) for 20 minutes, until brown on top.

    7. Add just a little milk to cover and cook in a moderate oven (350°F) for a further 1 hour.
