Veiled Peasant Girls
(Tilsorte Bondepiker)
What You Need:
  • 2 pound apples
  • Sugar
  • 1 oz butter
  • Breadcrumbs

  • How To Cook:
    1. Peel, core and quarter apples, add sugar to taste but no water, and cook to a puree over a low heat.

    2. Melt butter in a frying pan, add 3 oz. oven-dried breadcrumbs, sprinkle with sugar and fry lightly to a golden-brown, taking care that the crumbs do not burn.

    3. Remove from the heat and stir well, then cool.

    4. Fill a bowl with alternate layers of breadcrumbs and apple puree and decorate with whipped cream.

    5. Alternatively, fill a greased fireproof dish with alternate layers of breadcrumbs and apple puree, sprinkle with sugar, dot with butter and bake in a moderate oven (350°F) 40 minutes.

    6. Serve lukewarm, with whipped cream.

    NOTE:
Unlike the Danish version, this sweet is baked.
