Belgian Carbonnades
What You Need:
  • 2 pound chuck steak
  • ˝ pint stock or water
  • Salt and pepper
  • 1 pound chopped onions
  • 2 oz dripping
  • 1 clove of garlic
  • 3 oz lean bacon
  • 1 oz sugar
  • 1˝ oz flour
  • A bouquet garni
  • ˝ pint beer
  • 2 - 3 tablespoons vinegar

  • How To Cook:
    1. Cut the meat into neat pieces, season with salt and pepper, and brown in the dripping.

    2. Add the diced bacon and continue cooking for a few minutes.

    3. Remove the meat and bacon from the pan, stir in the flour, and brown lightly over very gentle heat.

    4. Gradually add the beer and stock, stirring continuously.

    5. Fill a casserole with layers of meat, bacon, chopped onion, garlic and a sprinkling of sugar.

    6. Pour the sauce over and add the bouquet garni.

    7. Cook very gently for 3˝ - 4 hours in a slow oven (325°F).

    8. Add a little more beer while cooking, if necessary.

    9. Just before serving, remove the bouquet garni and stir in the vinegar.

    10. Serve with plain boiled potatoes.
