Galician Soup
(Caldo Gallego)
What You Need:
  • 1 pound haricot beans
  • A few potatoes
  • A good-sized ham bone
  • ˝ oz lard or dripping
  • 1 - 2 beef bones
  • ˝ oz flour
  • 1 small cabbage
  • Salt and pepper

  • How To Cook:
    1. Soak the beans in water for some hours.

    2. Put them in a saucepan with 2 quarts water and the bones; bring to the boil and simmer gently for about 3 hours.

    3. After 2 hours add the finely shredded cabbage, the peeled and quartered potatoes and the fat and flour, mixed; season to taste and simmer for a further hour.

    To Serve: 2 - 4
